Happy Monday and an Apple Crisp Recipe

Hi all,

Thought that I would send out this Apple Crisp recipe, since the yummy fall apples are plentiful right now. Sorry no picture cause I haven't actually made it for a month or two, but when I make it again, I'll add a pic to this recipe.

My typing sucks cause I can't read what I'm writing, and just relying on 'spell check' right now. Had (have actually) a bout with Optic Neuritis over the past few days, and have spent most of the time in emerg at our local hospital. I must send out a huge cyber hug to my daughter-in-law Kerri who took me on Saturday, and stayed with me until dinner time, even thoug she was having company that night, and is pregnant enough to find stitting in those hard chairs so uncomfortable! She made the time pass so quickly, we just yacked and yacked; hey I couldn't see, nothing was wrong with my mouth people:) It was indeed a very lucky day when my son Jake picked Kerri as his wife.

On Sunday (still in emerg) my favorite sis-in-law (really I think that we are blood sisters, Rita could you check?) Nancy was working, and got me the most heavenly cup of tea ever, with a muffin that took the awful taste of the steroids they were sticking into the IV in my arm away. The tea wasn't even in a styrofoam cup folks, it was in a large heavy proper mug, with the bag still in it. Love you Nance:)

So I'm back at home with the IV still in, and a fridge full of yummy steroids. At least I can go to the HC clinic and get my infusion, and have to visit doctors, specialists, and have a CT scan, but I'm at home!! Can't wait until I am well enough to get back to my stitching, and reading. Anyhow, I now have a huge respect for my mother-in-law Jackie who has advanced Macular Degeneration. She treats her loss of vision with such a good attitude, and I am amazed frankly at how she does it. Mine will improve with each infusion, but hers wont.

So thanks to all of the nurses, relatives and doctors that helped me through the weekend, and who stopped to chat every time they went by. A special thanks to Dr. Burns who looked after me on Sunday, and who spent quite a bit of her busy day with me. She has a friend with MS, and really shared a lot of helpful information with me. I still can't believe that she is old enough to be a doctor, she looked about 16!

Apple Crisp

(makes a 9" by 13" pan reduce recipe in half for an 8" by 8" pan)

8 cups sliced tart apples (about 8 medium sized apples)
1 1/2 cups packed brown sugar
1 cup all purpose flour
1 cup rolled oats (quick cooking oatmeal)
2/3 cup softened butter
1 1/2 tsp. ground nutmeg
1 3/4 tsp. ground cinnamon

Heat oven to 350 degrees. Grease pan.
Arrange apple slices in bottom of pan. Mix remaining ingredients together in a bowl and sprinkle over apples. Bake 30 to 35 minutes until golden brown. Serve warm with whipped cream and a smile.

    I certainly hope that your vision clears up soon and that you will be back to stitching shortly. I had a bout with vision problems for a couple years and it was very, very scary! We seldom appreciate what we have until it doesn't work correctly. Hang in there and keep these yummy recipes coming!
